Sunshine Mango Smoothie Bowl

Prep Time 25 mins
Course Breakfast, Snack
Servings 2 people

Equipment

  • Blender or nutribullet

Ingredients

For Smoothie

  • 4 slices pineapple
  • 1.5 mango medium size, or 2 small
  • 1 banana
  • 1 tsp lemon juice or 1/2 tsp lemon zest
  • 1/2 cup water

For Garnishing

  • 1/2 Mango thin slices
  • 1 banana cut in circles/discs
  • 4 mint leaves

Instructions

  • Blend all the smoothie ingredients together
  • Check consistency and add more water if required. When making a bowl, I like to keep it thick and usually 1/2 to 3/4 cup water is enough.
  • Transfer to a bowl and garnish with mango, banana and mint leaves.

Notes

  1. Feel free to play around with choice of fruits depending on what is in season. For a nice and creamy base, pulpy fruits (mango, papaya, banana, chiku) work best so make sure to include at least any of these with other fruits of your choice.
  2. Avoid mixing melons or citrus fruits as that is poor food combining.
