3 Vegan Salad Dressings, Oil Free
#1. Buttery Peanut Dressing
INGREDIENTS
- ¼ cup plain peanut butter
- Ginger garlic paste (2 cloves garlic + ½” ginger)
- 1.5 tbsp coconut aminos
- 1.5 tbsp soy sauce
- ½ tbsp lemon juice
- Salt to taste
- Red chilli powder to taste
- Water as required
METHOD
Take peanut butter in a bowl and add all ingredients. Taking little water at a time, mix everything well with a spoon, as show in the video below.
#2. Green Goddess Dressing
- 1/2 cup sunflower seeds (soaked for 2 hours)
- ½ cup almonds (soaked for 6 hours, peeled)
- 1-2 cloves garlic
- ½” ginger
- 1/4 cup basil leaves
- 1/4 cup coriander leaves
- 1/2 cup capsicum, diced
- lemon juice – to taste
- salt to taste
- chilli powder/cayenne pepper to taste
- water as required for blending
METHOD
Add all ingredients in the blender and blend till smooth. As water as required for desired consistency.
#3. Cauliflower Mayo
INGREDIENTS
- 1/3 cup cashews (soaked 6-8 hours) (or any other nuts/seeds)
- ½ cup steamed cauliflower (only lightly steamed or blanched, overcooked cauliflower will ruin the taste of this dressing)
- Lemon juice from 1 medium lemon
- 2-3 cloves garlic (optional)
- Salt, cayenne pepper/red chilli powder
- Water for blending
METHOD
Add all ingredients in the blender and blend till smooth. As water as required for desired consistency.
