Street Style Pav Bhaji Recipe • Oil Free • Vegan

Pav Bhaji

Ingredients
  

  • 700 gm Potatoes peeled and roughly chopped
  • 250 gm capsicum roughly chopped
  • 250g gm carrots roughly chopped
  • 250 gm cabbage roughly chopped
  • 100 gm french beans roughly chopped

For Gravy

  • 250 gm onions finely chopped
  • 250 gm tomatoes roughly chopped
  • 1.5 " ginger roughly chopped
  • 4-5 cloves garlic roughly chopped

Spices

  • 2 tbsp pav bhaji masala
  • red chilli powder to taste, I prefer kashmiri powder for the color
  • salt to taste
  • water as required during cooking

Instructions
 

  • Boil 2 cups of water and add chopped potatoes, capsicum, carrots, cabbage and beans.
  • cover and let them cook till they become soft and mushy
  • when soft, remove from the flame and mash thoroughly with a vegetable masher

For gravy

  • take finely chopped onions in a pan with 1.5 cups water, cover and let cook till the unions turns transparent
  • make puree with tomatoes, ginger and garlic and add to the cooked onions
  • once all water dries up, add 1/2 cup water and cover and let it cook on low flame. the longer we cook this gravy, the more delicious it will turn out.
  • when this water also dries up, add all spices and salts and 1/2 cup water
  • mix it well and then add the mashed vegetable and mix again
  • now cover and let it cook on low flame for 15-20 minutes and then turn off the stove and let it sit for 10 minutes.
  • while serving add some lemon juice, vegan butter and finely chopped onions. serve with toasted pav (buns).

Notes

To make this super delicious, it is important that we cook the onion-tomato gravy for a long time by slowly adding some water when it dries up. This will ensure that there is no taste of "raw onions/tomato" in the final dish.
