ZUCCHINI SHORBA Raw Vegan Soup Recipe
Raw Zucchini Shorba

Ingredients
For Blending
- 3/4 tomato, roughly chopped
- 1+1/4 cup green zucchinis, roughly chopped
- 8" celery stalk
- 3” long Leaks (or sweet onions)
- 1 tbsp date puree or 2-3 soaked dates
- 1 tsp jeera powder
- 1 tsp coriander powder
- Chilli powder to taste
- Salt to taste
- Tamarind pulp to taste
- Water as required
For Pulsing
- 1/4 tomato, diced
- 1/4 cup zucchini, diced
For Garnish
- Diced tomato
- Zucchini coins in halves
- Celery leaves
Instructions
- Add all blending ingredients to the blender and blend to form a smooth paste, placing tomatoes closest to the blades along with about ½ cup water
- Check consistency and add more water as required.
- Add pulsing ingredients and pulse 2-3 times
- Once ready, refrigerate for 2 hours for all flavours to seep in.
- Garnish when you wish to serve.
